Tall, Dark, and VEGAN Nib Brownies Recipe

These Tall, Dark, and VEGAN Nib Brownies are dense and full of rich authentic chocolate flavor with the satisfying crunch of nutty cacao nibs. And that beautiful dark color? It's complimented by a texture that is a fine line between chewy and gooey!

Momma Told Me: Like a tall cup of coffee.

If you've ever heard the flirty phrase, "Tall, Dark, and Strong" in reference to coffee and men, then you'll know exactly where I'm going with today's recipe. Chocolate, much like coffee, actually has a lot in common. In fact, there are many cultures where cacao beans have long been roasted and served as beverages at times of festival and to guests of great honor. And Cacao Nibs, the coffee bean of chocolate is are widely regarded as nature's chocolate chip.

Nibs, dried and fermented cacao beans are rich in bitter cacao flavor and have a wonderful nutty crunch that is extremely addictive to an elevated palette. You can't call yourself a true chocolate lover without having tried Cacao Nibs at some point.
For baking, sweet nibs are sold lightly coated in coconut sugar. For snacking you'll find some of the world's more exclusive bean-to-bar chocolate bars with nibs nestled inside, or simply chocolate coated nibs. And, if you're simply a fan of raw chocolate, you can enjoy whole cacao beans sourced from the rarest single origin growers, sold in the pod, as fresh as the flavor experience gets.

But Cacao Nibs aren't for everyone. They truly have a much more Earthy, 'raw cocoa' flavor that is quite reminiscent of coffee with nutty notes and textures. They're playful crunch and snap makes them a wonderful addition to any recipe when seeking texture.Since they are typically bitter you will often want to use a Sweet Nib product when baking, or consider replacing nuts in a recipe for plain raw nibs. Personally, I enjoy sprinkling sweetened nibs directly onto a scoop of Vanilla Bean ice cream!

Of course Nibs are the heart of chocolate, their origin, so I've chosen to share a delicious Vegan brownie recipe that is perhaps more indulgent, and more brownie, than any non Vegan recipe I've ever tried. Don't worry, if you're not Vegan, there are no expensive or fancy replacement ingredients outside of the Nibs and a high quality Cocoa Powder. The more you invest in your Cacao ingredients on this one the richer the flavor experience will be. These are NOT intended to be your typical Hershey's brownies.

Expect these brownie to be dense, but not gooey or sticky. The photos showcase the wonderful texture of these brownies beautifully but I promise they are not under-cooked, or even messy to enjoy. There's even a bit of chew to compliment the crunch of the nibs- like a great brownie should have. And the color? Well, that's all cacao baby. Best of all, because of the high focus on traditional flavors, instead of sweetened or processed ingredients, these brownies aren't over-indulgent by any means. You will want to enjoy them with a tall glass of Coconut Milk, but your palette won't be feeling weighed down by the shock of sickly sweet. Just take my word- these are definitely worth the try!

What Daughter Says: True chocolate flavor is intense, rich, and full of origin flavors. Nibs are the flavor chocolate is steeped in.

Momma Told Me: Change how you eat.

As a teenager, like most teenage girls, I struggled with body image as well as the concept of nutritional eating. It wasn't quite about weight, it was about how I shaped the body I was given. It was my natural reaction, with the pressure of high school dances and a full social calendar to begin a 'diet'. Thankfully, I wasn't quite old, or responsible, enough to make my own grocery choices and Momma wasn't about to see me being a trend of poor decisions based on fads and forms of starvation.

I recall one particular evening where I'd slumped into the passenger seat of our family's mini van and inquired the everyday questions, "What's for dinner?"

My mother, without pause, replied with a single word, "Pizza."

I felt my face scrunch as I bit my lip, remembering the Winter formal that was just weeks away and my recent declaration, which has expressly sworn off all things cheesy and carb. Because she knew her daughter well, Momma was quick to reply before I'd even began to get the first words of protest off my tongue, "Calm down, not that kind of pizza." She went on to explain she'd made some fresh dough in the bread maker and that we'd be enjoying a southwestern inspired pie made with fresh vegetables, handmade marinara, shredded chicken, and black beans. It was delicious.

When I handed my plate in that evening, clean enough to have emerged from the dishwasher, Momma smiled one of those 'knowing' smiles only a parent can have, "You don't have to change what you eat, just how your eat."

As an adult I enjoy my fair share of junk food. I'm not what I'd consider to be 'a health nut,' but I am what I consider to be a 'conscious consumer.' That is to say that I make sure to balance the less than nutritious with plenty of wholesome, truly satisfying, real ingredient based dishes. And, when a close friend of ours became a Vegan just over a year ago I was greatly intrigued by the concept of how eliminating specific things from one's diet can require them to expand their horizons and really 'think outside the box.' I found that the dishes I made specially for him were not only delicious, but often included a few staple ingredients that really proved themselves versatile enough to work in multiple profiles and textures. That's when we really began exploring the many varieties of beans, and the diverse ways to serve and prepare them.

At the same time, I am a chef of convenience. I, like so many, have very little time to spend slaving over the stove at mealtime. (Especially for lunch.) Thankfully one of my new favorite ingredients comes in a wide variety of convenient ready-to-eat canned options, thanks to S&W Beans. From White Cannellini and Garbanzo to 50% Reduced Sodium Kidney Beans and new Organic Black Beans- there's truly an inspiration for every dish. Even better their high quality beans, such as the 50% Reduced Sodium Black Beans featured in my Vegan Black Bean Avocado Salad, look great out of the can for 'to table' recipes that look as great as they taste. Don't believe me? Grab some sweet kernel corn, cherry tomatoes, red onion, fresh avocado, a dash of lime, and your favorite S&W Black Beans and whip up the impressively delicious Vegan recipe all of our carnivore friends request at parties!

And, again, while I don't practice any dietary restrictions, I've found it quite a worthwhile experience to explore new ways of cooking- particularly on the subject of baking. Reduced sugar, dairy free, and vegetarian are food profiles many of my family members and guests often meet. Finding sweet recipes that are heal-minded or meet these multiple check boxes, and still satisfy those of us who eat 'whatever we want' has been a definite challenge. The one recipe with a 'secret ingredient' that's converted the staunchest of junk food addicts? My Fudgy Black Bean Brownies, of course!

Now black bean brownies are nothing knew to the dairy sensitive and Vegan communities, but they do tend to have an initial knee-jerk reaction for pretty much anything else. "You made these with what?!" is what you'll hear to anyone you present them to with the full and proper recipe title, and for fair reason. I've had dozens of black bean brownie recipes and they are not all equal. The ratio of ingredients and time in oven play a crucial part to the quality of the brownie experience. The beans you choose to use play an even bigger role. That's why I use Organic S&W Black Beans for a rich flavor and texture that makes the moist fudgy, moist, chocolatey 'Vegan' brownies I've ever had.

You're probably a skeptic, even now, looking at that photo of chocolate-awesomeness above. Sure I put a photo of Organic S&W Black Beans in the background, but those cant be Vegan brownies. Oh yes, they're real, and that's them.

There are many varieties of S&W Beans, and ways to enjoy them- we find our diet lacks a lot of fiber that keeps us full and fueled between meals so we like to try and incorporate one variety or another into at least a meal a day. With all of the delicious varieties, we have yet to get bored- they're even delicious heated with some light seasoning as a side dish! Now that I've inspired you, now through April S&W Beans is offering $1 off 2 cans of S&W Beans. Get (and print) your coupon from the S&W Beans website.

What Daughter Says: Enjoy a richer diet when you consider what does into the food you eat.

Brownie Ghosts- So Simple, It's Scary!

Simple Brownie Ghosts: Simple Directions: Start with brownies- I do not care how you get brownies, I won't tell if you slaved over them for hours or not. Cut them into squares about 2" in width. Place 1 Jumbo Marshmallow atop each brownie square. Place the pre-made frosting of your choice into a microwave safe bowl and heat on high at 5 second increments until it can be stirred into an even liquid format. Spoon melted frosting over your mallows, allowing it to drip down the side like flowy ghost 'sheets.' Squirt some black food color or decorating gel on a plate and daub the end of a chopstick/skewer/cake pop rod (etc) into the black and daub tiny faces on your ghosts. Refrigerate until serving and enjoy!
Momma Told Me: It's almost scary how easy it is.

If Momma taught me one thing in the kitchen it's that, as good as it is to go all out and impress people with your mad skills in the kitchen, it's even better to enjoy the praise knowing you've created something amazing with hardly any effort at all. Some people call them 'hacks' or shortcuts, but there's no shame in grabbing a boxed mix from the baking aisle when your 4th grader announces she needs treats for a class of 25, by tomorrow morning. You still want to be the cool mom, right- but you don't want to be the mom who's cool because she's perfected her 'living zombie' walk after slaving in the kitchen until 4 am.
Easy Brownie Ghosts Recipe
Yes, there are things, awesome, amazing, life changing, things you find on Pinterest and file away for 'next year,' thinking one day you'll get around to them. And, of course, you never do. How many of those ideas on Pinterest look so easy and logical until you're several hours into a '10 minute' recipe and scrubbing dough off the ceiling? This, my friends is not one of those concepts. Anyone, yes, even your 5 year old, can assemble these Simple Brownie Ghosts, whether you bake the brownies from scratch, use a box mix, or hack up some squares from store-bought brownies, I'm not telling....
This idea is so simple, my friends, that I adapted it to an (almost) sugar free version for the sugar intolerant folks in my Thursday night bowling league. Am I Betty Crocker? No! I caught some Pillsbury Sugar Free Brownie Mix and Sugar Free Frosting on sale at my local grocery store. Viola- the only sugar ingredient was my Jumbo marshmallows! Are you ready for the super simple directions to these adorably wicked treats?

It's really as simple as that- you can't go wrong. In fact, the messier the better, so go ahead an let your children pour the frosting and daub those faces. Some of my faces 'ran' from the warmth of the frosting and added even more character. These were a huge hit at my league, and just $5 served about 40 people a brownie bite each. If you want to get REAL fancy, use some seasonal toothpicks to decorate and make picking up the bites a little simpler for your guests.

What Daughter Says: If it tastes great and looks adorable, nobody will care how long it didn't take you to make them!
