By now my regular readers know a few things about me. 1. I am personally on a mission to cut back on sugar and eat healthier in general. 2. I bake at least once a week in mass quantities for my bowling league. 3. When I don't have the time, and can't eat the sweets, I am always in need of quick and simple recipes to meet the demand of my league-mates. And that's precisely how this week's recipe was first made. In fact, this simple 4 (3 if you skip the nut garnish) ingredient recipe has been requested so much, I've made it twice since on request.

I love this particular recipe because there is no added sugar- your sugar content comes from your chocolate hazelnut spread, and you can eliminate most of the sugar by going for healthier Nutella copycat brands. I know, I know, but I love the taste of Nutella, Jenna. Trust me, the struggle is real- that thick, dark, hazelnut goodness gets me every time. Thankfully these cookies are not only easy to make, they're also very rich, you likely will find yourself satisfied after just 1 or 2. Even better, I make them bite-sized, so there's no mess of cookie crumbs when serving them on the go.
It couldn't be easier to toss some Nutella, egg, and flour into a mixer and whip up this dough. You'll notice the dough is initially very crumbly. I panicked at first, worrying it would never mold into solid cookie dough balls, but 15 minutes in the fridge proved me wrong.

The recipe calls for a tablespoon portioning system- I prefer to just pinch of chunks of dough and hand roll them. If you're not very good at 'eyeballing' your portions a melon ball scoop will give you the perfect portion, but some forming will still likely need to be done by hand given the dense yet crumbly nature of the dough.

Before you bake your balls of happiness you'll want to make a small well in the center with your thumb or the back of a spoon. Pipe your chocolate hazelnut spread directly into this well. Don't worry, it won't run during the baking process, you can 'pipe' quite high if you're feeling especially decadent. The original recipe calls for crushed hazelnuts to be sprinkled atop. I use slivered almonds because I typically have them in my pantry, and they're a bit more economical, with a very similar texture and flavor when prepared in such a small quantity.

Bake your cookies for not more than 10 minutes. They won't really 'spread' or rise. For the most part the way they go in is the way they come out, but with more of a fluffy 'baked' texture. Because these cookies are meant to be dense they will crack and fall apart if over-baked. I suggest doing a test batch to start, and removing at 8 minutes. Be sure to pull your cookies off of the hot surface and onto a cool one immediately upon removing from the oven, or the bottoms will continue to brown. The cookies are baked to perfection when the color and texture is even to the center when broken in half. Serve these bite sized cookies war for the biggest impact, or chilled with a shot of almond milk. Now, tell me, do you have a favorite recipe that's 5 ingredients or less? I love new kitchen hacks!

Last week was a dreary one here in my part of Southern California. I feel bad for complaining, partly because it's in the 70s and sunny outside now and, because a great portion of my friends and family were covered in over a foot of snow. You see, I love the rain, but it's those grey days in between I can't tolerate. They make for terrible photography days for me, and I honestly feel motivated to do little more than crawl back in bed with a book and read the afternoon away.

I digress, so there I was on day 3 of grey afternoons when I decided to dabble once again with Vegan baking. The week before the Girl Scouts had turned up at our bowling league peddling their wares and the entire alley was flooded with people eating straight out of the box with no regard for New Year's Resolutions. Not that I judge- I so sorely wished I was one of them, but my self control weighed out. Every year I buy at least 1 of every Girl scout cookie variety under the premise it's for a 'good cause' all the while hoping there will simply be a donation box I can contribute to next year. As it turns out you CAN easily donate to your local girl scout chapter ONLINE- so this year, I have! You can also use the new Digital Cookie platform to order cookies online and have them delivered to a family member or charity organization by mail or in person from a Girl Scout themself!
So there I was, mulling over the fact I was so clearly Girl Scout Cookie-less, on a dreary weekday, inspired to make something vegan when it hit me- Vegan Samoa Cookies. Somoas are the perfect cookie to Vegan-ize with a shortbread base, plenty of coconut and a chocolate drizzle that easily translates to dairy free. In fact, this recipe only has 9 ingredients, and anyone with shortbread experience can master these in not time.
Of course, if you've never made shortbread before, you may want to avoid making your first time with a Vegan formula. Shortbread is notoriously temperamental for over-baking/blackening on the bottom, and requires a bit of patience when making cutouts. In this case you can add a little extra Earth Balance (vegan butter) but the Coconut Flour will still tend to want to fight you unless the dough is kept perfectly chilled. In my case it also didn't help that I didn't have a small circle cookie cutter the right size for the center punch out- so I spent extra time trying to pry dough from my 'O' Bento cutter every other cookie.
When I served these I kept getting asked how I made a Vegan caramel- with the wide variety of Vegan items originally based off animal byproducts I always have to chuckle when I'm asked how I made something Vegan. You can literally make anything in Vegan imitation form. This caramel is actually made almost identical to dairy based caramel, but with Vegan butter substitute and Coconut Cashew milk instead. The color and consistency is near perfection- the only difference is that it seems to harden more over time, and should never be served from the refrigerator.

So, feel free to grab the recipe below and give it a try- you certainly won't regret it. I served these to otherwise 'ordinary' non-Vegan consumers at the alley last week and had multiple requests for the recipe. Just note not to bake them on foil (use parchment or silicone liners) or you will likely crisp the shortbread. Imagine how impressed your family and friends will be when you tell them you made your own Girl Scout imitations, and they're entirely animal byproduct free! When I was a young girl every single meal was accompanied by a glass of chilled milk. Sometimes it had chocolate syrup in it, or a fancy colored spiral straw, other times I was simply told to drink it or I would get no dessert. Day in and out, Momma would place a glass of milk in front of me until I came to expect it. More than expect it, look forward to it. After all, I wanted to grow up big and strong, just like my father, and years of watching him chug a tall glass each night was more than enough to inspire visions of milk turning me into some form of young girl super hero.

And then my cousin, 3 years younger than me, at a T.G.I Fridays, or some other similar fast casual sit down restaurant, taught me one of the worst childish habits I've carried with me since. There's a reason they put kid's beverages in cups with lids. But on this magical day the restaurant had been out, I clearly recall because my Aunt was raising quite the havoc with the manager on duty when it happened. Blurp. Blurp. Blurp. Whoosh. Blowing into her straw she'd created a volcano of milk bubbles- bubbling the contents of her glass right over the edge. As we both erupted in giggles I resolved milk would never be so boring again.

Of course I love dairy- and what's not to love? Oh, that mild discomfort hours down the line? That little grumble of tummy troubles that causes me to shift in my seat? I've always known it wasn't lactose trouble- Jay has lactose trouble, and that doesn't compare to my tussles. No, I like to think of my dairy interactions as playful roughing between old friends. Sure it might be a little inconvenient after the fact but I'm still going to bring up the good old days and slug my buddy on the shoulder as I down another glass. That was until I began buying milk alternatives for Jay.

I kind of became complacent. I forgot my long lost friend, and all of those memories we'd shared. The milk stains on the table, the half of a cookie soggy at the bottom of my glass, the taste, the texture. I reached for whatever was on hand because it was convenient, and because I knew I wouldn't have any arguments from my stomach later. So I was shocked to learn that 1 in 4 Americans experience discomfort after drinking milk; yet only 3-4% of the population is clinically diagnosed with Lactose Intolerance. What about the other 20%? Did they give up on milk over some playful gas or tummy grumbles? Do they continue to drink their beloved white gold while ignoring the results?

As it turns out there is a protein in ALL conventional and organic milks called the A1 protein, which is known to trigger 'Post Dairy Digestive Discomfort.' It is entirely unrelated to lactose and in no way associated with that which ails those who are lactose intolerant. (If you have a diagnosed lactose intolerance this will not help you.) However, the removal of this protein, through heirloom a2 cows results in a naturally A1 free milk without any genetic or post milk production altering. You could say that a2 Milk® is milk the way mother nature intended it- and it could be the most authentic dairy solution to everyday self diagnosed dairy discomfort.

I'll be sharing these with luncheon guests nestled in the hands of playful sugar cookie bunnies- a treat for now, and a treat for later. You can easily make these sugar cookie cuties yourself with a standard cutout sugar cookie dough, a large sheet of parchment paper cut into 1"x 8" strips, some spare foil, and a bunny cookie cutter. If you can find a bunny cookie cutter with arms already built in, great, otherwise you can easily cut some into the standard bunny shape, as shown above.

Set your bunny cookie cut-outs on a parchment lined cookie sheet with a strip of parchment paper running horizontally behind the bunny's 'shoulders.' Prepare some foil into 1.5" loosely rolled strips about the general width and frame of your individual Chocolat Frey bars.
