I fear there is little more I can say to emphasize my love of this company, having spent the last 2 months featuring their Certified Steak and Seafood alongside some of my favorite sides. Does it really take more than one glance at these beautiful raw ingredients to get one's taste buds salivating? I love working with premium, gourmet, protein like Alaskan Salmon and Angus Ribeye, but I often feel so intimidated when browsing my local butcher. Not only am I often paying a premium for the fresh meat, but then I am tasked with the chore of regulating it's freshness, ensuring it hits the freezer before it goes bad. And I don't have any fancy processing techniques for my 'fresh to frozen' storage. It's rather the opposite of glamorous, really, into the Ziploc baggie and tossed onto a pile in an off-white drawer. I don't have charts to track the product's origin, I'm lucky if I can tell you which store it came from, and determining the date of harvest *Scoffs* that'd be a magic trick, indeed.

There are several reasons to shop Certified Steak and Seafood for personal dining and gifts; the most obvious one being the rigorous 3rd party testing, and certification, each product undergoes at it's time of harvest. Not only does the third party ensure health standards through bacteria testing, but the company's unique certificates provide a basic nutritional rundown of protein and caloric content. You'll also be tickled to learn just where in the world your meat/seafood was raised and harvested from. And, as much assurance as these practices provide, you'll always have the peace of mind of the company's 100% Satisfaction Guarantee. "At the end of the day, you're right - no really," their Satisfaction Policy states. If for any reason, whatsoever, you are not pleased with every last bite of your purchase, they'll make it right with a complete replacement or refund. No claims processes, no long waits in a phone queue line, no run-arounds, just good, old-fashioned, customer satisfaction.

To provide an honest reflection on my previous Certified Steak and Seafood experiences, I'd have to voice my confusion that 3/4 of the products I received and thawed experienced some leaking in thawing. This, to me, would indicate some sort of integrity breach/hole in the individual packaging. Ordinarily, I'd anticipate this was something to do with my own handling, but as a consistent element through each protein, stood out. I can only imagine I may have been given these particular items as press samples for their flawed packaging? In any case, I would suggest cooking and consuming promptly after thawing, and always thawing any protein in a secondary container to avoid cross-contamination of juices. I noticed no quality issues as a result of these 'pin holes' in the packaging, and all food cooked beautifully, as you can see!

When you receive an order from Certified Steak and Seafood you are truly in for a treat. Each protein is packaged by individual portion, and nestled inside an attractive color coded box. As with most frozen to door orders there will be a bag of dried ice keeping your next day delivery in top condition, and all 'certification' paperwork is safely contained in a clear plastic sheet protector. There are some basic preparation and handling tips, but you'll find plenty more resources for recipes and cooking on their website. I blogged about how intimidated I was cooking their Jumbo Scallops; I was relieved to see feedback on low moisture scallops and recipe suggestions to point me down the right path. Most common portions sold through the website are geared to feed 3-4 with the smallest order. 4 uniform steaks, 2lbs of scallops, etc. This is especially convenient, because the protein arrives frozen from fresh, and in it's freshest suspended state. That means I can stash away the remaining steak and seafood for a treat months down the line!

This wouldn't be a fair wrap up without mention of my favorite Certified Steak and Seafood product; Tender Filet Mignon. No matter what you are ordering, do yourself, and your stomach, a favor and add on at least one of these 4oz filets (yes, you can buy them individually!), and have a private celebration of yourself. I have never tasted a filet so tender and flavorful, direct from my kitchen! This tender meat melted along my palette and required no additional seasoning or steak sauce; it was heaven on Earth.
