I fear there is little more I can say to emphasize my love of this company, having spent the last 2 months featuring their Certified Steak and Seafood alongside some of my favorite sides. Does it really take more than one glance at these beautiful raw ingredients to get one's taste buds salivating? I love working with premium, gourmet, protein like Alaskan Salmon and Angus Ribeye, but I often feel so intimidated when browsing my local butcher. Not only am I often paying a premium for the fresh meat, but then I am tasked with the chore of regulating it's freshness, ensuring it hits the freezer before it goes bad. And I don't have any fancy processing techniques for my 'fresh to frozen' storage. It's rather the opposite of glamorous, really, into the Ziploc baggie and tossed onto a pile in an off-white drawer. I don't have charts to track the product's origin, I'm lucky if I can tell you which store it came from, and determining the date of harvest *Scoffs* that'd be a magic trick, indeed.
To provide an honest reflection on my previous Certified Steak and Seafood experiences, I'd have to voice my confusion that 3/4 of the products I received and thawed experienced some leaking in thawing. This, to me, would indicate some sort of integrity breach/hole in the individual packaging. Ordinarily, I'd anticipate this was something to do with my own handling, but as a consistent element through each protein, stood out. I can only imagine I may have been given these particular items as press samples for their flawed packaging? In any case, I would suggest cooking and consuming promptly after thawing, and always thawing any protein in a secondary container to avoid cross-contamination of juices. I noticed no quality issues as a result of these 'pin holes' in the packaging, and all food cooked beautifully, as you can see!
Filet Mignon. No matter what you are ordering, do yourself, and your stomach, a favor and add on at least one of these 4oz filets (yes, you can buy them individually!), and have a private celebration of yourself. I have never tasted a filet so tender and flavorful, direct from my kitchen! This tender meat melted along my palette and required no additional seasoning or steak sauce; it was heaven on Earth. Certified Steak and Seafood truly has something to tempt every taste; remarkably at competitive prices.
