The older you get the less sparkly some of the major holidays seem. That, my friends, is why we have national 'day of' celebrations- to spice up the otherwise dull periods between traditional, over-commercialized, holidays. Today, March 14th, is one of those days. Yes, magnificent Pi Day, appropriately assigned for it's semblance to the mathematical number 'Pi', which begins 3.14. Or, if you're a lush like me, it's just a good excuse to eat tons of pie and make 'punny' jokes all day. However, this year, I'm changing things up a little and taking my Pi day theme to a whole new level with an Edwards 'Piece' Offering.
That's right 'Piece' as in piece of delicious pie, inspired by the concept of 'peace' as in flowers in tanks and rainbow signs. And really what better way is there to make peace than over a slice of rich and creamy frozen pie you didn't actually have to lift a finger to prepare, or bake? Now if only I could make 'piece' over the argument of which delicious Edwards frozen whole pie goes into our cart each shopping trip! See I love a good light and fluffy Strawberry Creme, while Jay wants to pack as many toppings, and as much flavor into every slice as possible. He tends to shop for indulgent flavors such as Hershey's Chocolate Creme or Cookies and Creme.

No joke, the pie fight is real in our house. One month we went several weeks without picking up an Edwards pie (gasp, weeks!) and upon cleansing our fast we couldn't agree on which pie to pick up. At one point Jay and I were pulling pies in and out of the cart, to the freezer, and back just waiting to see who would break first. I, being the oldest, and wisest, decided there would be NO PIE if we could not agree on ONE pie. Needless to say we went home pie-less. It's a travesty that has, thankfully, never repeated itself.
So, it's on days such as these, celebrating Pi, but not Pie, with pie- that I often reflect on ways in which I can be a better person. I'll be honest there have been a few disagreements here as of late and it was simply time to make 'piece' over common crust. In preparation for my Pi Day plan I went into my local grocer and picked out several of our favorite Edwards whole pies. One of them, sadly, did not make it to today's celebration, but it gave itself in the name of 'piece' and that is all a pie really can hope for.

Recently Jay and I have been hiding the remotes across the house in an effort to snag first picks on television programming. (Don't we just 'adult' the bestest?) I knew Pi Day was the perfect opportunity to make 'piece' once and for all and put all that remote control hogging business behind us for good. (Or, at least until Game of Thrones comes back on.) I tied up the remotes with one of my Pie Day printables and presented them to him on a box of Edwards Hershey's Chocolate Creme Pie. He was pretty speechless, so I attempted to cut a slice out of his pie while he pondered what was truly going on. Okay, so I may not be very good at all this peace business, but I can certainly get down with a great 'piece' of delicious pie!

So there you have it, my Pi Day master plan, revealed. It's not really top secret, and you don't need an excuse to enjoy a delicious pie- BUT if it helps make you feel better about indulging in something sweet, who not make 'piece' while you do it? Momma Told Me: Sometimes you have to get a little creative.

Growing up I didn't have much of a kitchen- rather, Momma didn't have much of a kitchen. We lived in a little 2 bedroom condo; the bedrooms stacked on top of the kitchen and living room- a cutout in a sea of identical units. I didn't really appreciate what this meant, as a testament to Momma's patience and skills, until we moved into our family's first real home over a decade later. There was no warm sun shining in from the kitchen window, or wide sill to rest a homemade pie on. We had harsh fluorescent lighting and a kitchen Momma could open the fridge, while stirring the pasta sauce, while filling the sink with water in. There were no frills, and every decision mattered when cooking.

Today, I live in my own 'starter' condo- as so many people my age do here in Southern California, where real estate is prime and space runs limited. If you want to live near the beach you'd better be a millionaire, or willing to share walls, in our part of the state. So, for our family, we go through many of the same space compromises my own parents did. We rely on compact appliances, construct a free standing 'pantry' of shelves in the dining nook, and find creative ways to cut down on waste and messes when in the kitchen. I'll even be honest, my dining table doubles as a workbench when I bake, because I simply don't have the counter-space to feed the large leagues and groups I do, otherwise.
One way I survive working in a micro-kitchen is with various tools and surfaces that allow me to move from one area to the next quickly, efficiently, and cleanly. In addition to over-sized baking cooling racks, I keep Reynold's Cookie Baking Sheets on hand all year. I simply don't have time to wrestle with a large roll of parchment paper while balancing a cookie sheet on one knee and licking cookie dough off my arm (and believe me, I've tried!) Having pre-measured, pre-cut, Reynold's cookie sheets I can simply unfold and go are a lifesaver, especially in my most requested cookie recipe- pie cookies. You could say they're kind of my specialty, so, today, I'm going to share the very simple process with you.
You're going to want to begin by clearing off a nice open surface to work on, and by opening a box of Reynold Cookie Sheets. Line two baking sheets with a sheet each, then line a cooling rack with a sheet, and place two side by side on your flat, level, work surface. Next, unroll 2 pre-packaged, ready-to-bake pie crusts, placing one each on the work surface cookie sheets. Using a rolling pin go ahead and roll out your crusts to an even shape about 1/3 larger than they initially were. Don't worry about flouring your surface, your Reynold's Cookie Sheets will keep the crust from sticking to your surface as you work.

Next spread a generous layer of fruit preserves on one of the pie crusts. In most cases your recipe will feature a preserve and pie filling of the same fruit variety, but you can feel free to experiment- for example, blueberry lemon tastes delicious. For apple pie go ahead and put a layer of salted caramel down instead of preserves! Once your preserves are evenly applied smear a helping portion of pie filling over the preserved crust. If you are concerned about the cookies being too thick or hard to handle, you can go ahead and shred/dice the fruit filling to a thinner consistency. It really does depend on how 'home-style' authentic you want your pie cookie experience to be.

Next, take your other pie crust and cut even strips (about 12-15, depending on how tight you want your crust weave to be) with a pizza cutter. While thinner strips will ultimately make for a more impressive weave and pie cookie finish, keep in mind you will be weaving the crust top all by hand, and the more, thinner, strips, the more work this will be. If you're not confident in your pastry skills you may want to stick to 10 strips per crust.

However many crust strips you decided to cook, you will next want to lay half of them across your 'filled' pie crust, being careful yo leave a gap equal to the strip size, between each pair of strips. I do this by removing every other strip from my cut pie crust and laying it down with equal spacing. Next you will begin laying the strips in the opposite direction, but with a little more time and deliberation. Carefully lift every other vertical strip to 'weave' through your horizontal strips. Up, down, up, down- until you have gone all the way across. To make the process easier be sure to lift the vertical strips by 'peeling' them down from the top and laying your vertical strip underneath when necessary. Ultimately it's a very sticky delicious process that leaves one feeling quite rewarded.

The next part can get especially messy, so it's a good thing you have the non-stick power of Reynold's Cookie Sheets on your side. Taking a round (3-4") cookie cutter press circle cuts into the layered cookie pie creation and carefully place the cookies on your lined baking sheets. On virtually any other surface this would mean a sticky mess of saturated pie crust and sugar syrup. You, however, will have the satisfaction of lifting these messy cookies up with ease. Even better, you don't need to space them more than a half inch apart, since the pie crust really won't 'spread' much in baking. Do, however, keep in mind that the various fillings WILL bubble over and spread on the cookie sheet while baking!

Go ahead and brush your beautiful pie cookies with a light egg wash and send them into the preheated oven for 12-15 minutes, or until the outer edges begin to brown. Reynold's Cookie Sheets are oven safe up to 420F*, so this recipe will cook evenly, and too perfectly without further fuss. If you're feeling particularly fancy you can brush a little butter on the top of the pie crust with a sprinkle of sugar just 2 minutes before they're done. I also find a little course salt goes well with apple pie cookies featuring a sweet caramel layer. (Reynolds Genuine Parchment Paper and Cookie Baking Sheets (pre-cut parchment sheets) are tested to safely withstand oven temperatures up to 420°F.)

Ordinarily this recipe would wreak havoc on my cookie sheets- the caramel applie pie cookies, in particular, tend to caramelize and burn all over my beautiful pans. Not only do the cookie sheets help encourage even baking, but they contain the mess of sticky pie fillings, and make the cookies instantly transferable to waiting wire cookie racks. Every good pastry chef knows those seconds are crucial to ensuring delicate pastries don't burn or overcook after removal from the oven! Just slide the cookie sheet off the tray and you're in business!

Because you've saved so much time on cleanup, you'll have a little leftover to package up your cookies- after all, you're not going to eat ALL these delicious pie cookies yourself, are you? I mean, sure, you COULD, but half the fun in baking is baking to share- so there's no need to be stingy. And it's not exactly like the process was THAT complicated you couldn't make more, right? So take your best cookie vessel and line it with a quartered (or folded) Reynold's Cookie Sheet- you're going to want to put layers between these cookies so all of that delicious pie filling goodness doesn't stick to one another.

Momma Told Me: When the pie was opened, the birds began to sing.

When I was a young girl, no older than 4 or 5, Momma would call me into her bed each night (thinking back my bedtime was probably 4 or 5 in the afternoon, but I digress) to read me a story from the official Grimm's Fairy Tales compilation. It was a large paperback book with more pages than any I had seen before, outside perhaps Merriam Webster's Dictionary, and out of the top smiled a Persian cat bookmarking where we had last dropped off. Now these weren't the colorful storybook fairy tales of traditional childhood, these were the unabridged, dark and brooding adaptations much closer to the originals. And, while some might question Momma's thinking in choosing to share these from such a young age, I assure you she always read ahead to lighten the darker parts.

Naturally, as a little girl who knew that Disney's fairy tales and Grimm's actual tales were far from one in the same- that at the end of The Little Mermaid Ariel is in fact offered a knife to kill her beloved prince and return to the sea, and much like the modern Into The Woods feature film indicates the stepsisters in Cinderella did indeed cut off parts of their feet in an attempt to fit them into the Prince's slipper. Morbid as this may seem, my ultimate point is that fairy tales were never intended for children at all- many of the stories we have sweetened up with fairies and talking mice were in fact meant as cautionary tales to bored adults and the men and women of the king's court.

What does this have to do with Blueberry Pie, you ask? Well, after recently watching, and thoroughly enjoying, Into The Woods in theaters this past holiday, I was reminded of the Grimm's fairy tales my mother used to read before bedtime. One in particular stood out- the tale behind the nursery rhyme 'Sing A Song Of Sixpence,' perhaps one of the first retold recollections of an animated pie. While historians gather the actual pie was likely of minced meat, it is more colorfully told that blackbirds swiftly emerged from the crust of this berry pie, when placed before the king. As crazy as it sounds, and an element of the tale that seems more exaggerated rather than real there are numerous accounts of 13th century pies bursting of living creatures from birds and small animals to actual tiny humans (dwarfs.)

So, while I wasn't about to craft any 4 foot pies with small animals inside, I was inspired to try my hand at a traditional storybook pie- Blueberry with a Winter comfort twist. I'll be honest, I've only ever used blueberries in scones, and never handled fresh blueberries (primarily because they can be so expensive,) so I was a bit nervous when I set out. I happened to have 2 deep dish pie shells in the freezer from the holidays (so I can't take credit for those) which especially motivated me to get in the kitchen yesterday and give this recipe a try.

I'm no Martha Stewart, but there is something inspiring about working with fresh ingredients- watching the rich blue berries cook to a beautiful  purple. Naturally, halfway through baking I remembered I didn't own a pie crust shield (hard to believe, right) and had to emergency tent my crust rim to keep it from overcooking. Thankfully that worked like a charm, a few scalded knuckles later. I was skeptical about the streusel topping, but 20 minutes cooling on the window sill, in true storybook fashion, and this pie looked picture perfect- no small animals harmed in the making!

So try this Blueberry Custard Pie hot or cold (it was the biggest hit cold in our house,) and bake an extra to gift for a friend or neighbor- jut leave the birds out. As far as pie making goes this recipe's pretty straight forward, but the comfort level of a heaping slice does wonders after a long day.
