

It's a great thing I'm not lactose intolerant because I love my dairy much too much to give it up in any capacity. Even as a young girl Momma would sneak into the fridge and split a slice of deli cheddar with me for an afternoon treat. We knew we were being bad- sure there's the calcium and protein, but dairy has a bad rep for being indulgent in a bad way. In college I had a habit of breaking into a pint of Ben & Jerry's every other night. Thankfully my metabolism kept up with my sweet ice cream cravings, but I find myself less lucky the older I get. These days I'm seeking a satisfying treat with much less guilt.

Yoplait Greek Whipped Cheesecake Bites

Ingredients:
2 Yoplait Greek 100 Whips Cups In The Flavor of Your Choice
1 C Fresh Washed and Sliced Fruit Of Your Choice
1/2 C Light Whipped Cream Cheese
1 C Graham Cracker Crumbs
1/2 C Butter or Margerine Substitute
1/4 C Granulated Sugar
1 C Dark Chocolate (For Melting)
2 Ice Cube Trays (Silicone Preferred)
Directions:
1. Combine graham cracker crumbs (or crushed graham crackers) and sugar in a food processor and pulse until rough sand texture. Remove and combine by hand with sliced butter until a crumble is formed. Press 1/4" into ice tray pockets to make a crust-like layer.
2. Blend Yoplait Greek 100 Whips!, fruit, and cream cheese in a blender until smooth and even in texture. Spoon into ice tray pockets until full being careful not to overfill past top of trays.
3. Place ice trays in freezer for 4-5 hours, or until solid throughout. Turn onto a wax paper lined baking sheet and stand, crust layer down.
4. Melt chocolate in the microwave on 7 for 1 minute and stir until evenly melted. Add 1 TSP shortening to thin, if needed. Spoon over tops of cheesecake bites and return to freezer for 1-2 hours. Enjoy frozen.
