In my mind Summer is the best time of the year to entertain. Sure the holidays are filled with delicious food, timeless music, and large gatherings of family and friends- but entertaining over the holidays arguably creates the most stressful times of the year as well. In fact I used some of our favorite Black Box Wine, (California 2013) Pinot Noir to reduce a Blackberry Noir Aioli that we've been slathering on everything  we can imagine for weeks. Momma Told Me: I've got something for that!

 There was a time in my life where I carried a handbag exclusively for aesthetic reasons. I'd lug around a 2nd hand shoulder bag with straps 2 feet too long for my height and follow Momma though the grocery store or to her Dr's appointments. I never carried much of value in it, just a couple of my parent's expired credit cards and some chewing gum. And then I grew up and learned that handbags were actually meant to be the modern woman's Sonic Screwdriver/ MacGyver's tote. I was expected to have just about anything necessary to solve just about any crisis, on hand, at any given time.
And for years I've carried it all in my purse; bandaids, wet naps, safety pins, flashlights, motion sickness pills, clear nail polish, pepper spray, suntan lotion, lipstick, nail files, breath mints, and more. But few things have occupied as much retail space in my personal handbag, as heartburn remedies. That's because so many of them are only effective within certain time frames, with certain types of food. From chewy chews to chalky tablets and sticky pink liquid- I've carried Jay's heartburn remedies around for years.
You see, frequent heartburn not only gets in the way of the sufferer's living, but the lives and activities of those around them as well. Those who've struggled with fighting heartburn know there are several 'triggers' one should avoid, and those with loved ones who suffer should be mindful of them. As any good theme park visitor knows, it's just not a visit to the park without sampling some of the various themed foods. For an afternoon snack we all shared a heaping portion of Bumblebee Man's Fiery Carnitas Nachos, complete with a generous serving of fresh jalapenos. Jay boldly took his intestinal fortitude to any heartburn sufferer's worst frontier- 'spicy.' He usually avoids heat infused foods altogether, especially while out traveling, just another way heartburn sufferers learn to adapt to daily inconveniences and diet changes without regular treatment.

While he was anticipating the deliciousness set before him, he also remembered to take his daily Nexium 24HR purple pill. We even had time to go through some of the feature film exhibits, and get a little wet on Jurrasic park. Pro-Tip: If you're traveling with teenagers and adults consider utilizing the Single Rider line. Your party may get split up, but in most cases will ride at the same time, just on different cars.
Since we were already right next to Super Silly Fun Land (yes, that's a place, a magical, magical place- It's SO fluffy!!!!) we decided to grab lunch at Gru's Lab. Theme parks offer a lot of food options for meal dining, from nationally recognized chains to food carts and sit down themed restaurants. Gru's Lab happened to be more of a cafeteria style service with several, adorable, Minion decorated desserts. (Hello Twinkie cupcakes!) Jay indulged in an extra large Meatball Grinder with fries- he wasn't going to let a little tomato sauce get in the way of his day.

And because no theme park visit is complete without something sweet, we stopped by Phinneas Q. Butterfat's Ice Cream Parlour minutes before park closing, and on our way to the Water World show, for a carnival inspired confection. Remember those head-sized donuts I mentioned earlier? Apparently the small, normal sized, donuts are unexceptional all on their own. Here they find new, magical, meaning with several scoops of ice cream, hot fudge, strawberries, and sprinkles wedged between them.

Some of us wanted to eat this impressive food shaming concoction, I just wanted to photograph it in all it's pink frosted, sprinkle glory. I'm not going to lie, this place was pretty magical with the smell of cotton candy and buttered popcorn in the air. Our day surely would not have been the same without all of the creative, delicious, theme park food!

And how did Jay fair after consuming all of the colorful fare? Well he certainly wasn't complaining one bit as we stopped into a local restaurant for some late night boneless buffalo wings after making the trip back from L.A. In our family we have a saying when someone's checked something big off their Day/Summer/Life Bucket List- 'Best Day Ever.' I do believe that phrase was thrown around more than a few times that day at the park

Some of my favorite childhood dishes were meals Momma whipped up with leftovers and a bit of ingenuity. They were haphazard, unlikely, meals that quickly became favorite weeknight solutions for their touch of gluttony and simple composition. There were the Tuesday night trash tacos made of just about any meat, veggie, or condiment Momma happened to have lying around in the fridge before doing the week's grocery shopping the following morning. Sometimes these 'tacos' included frozen chicken nuggets, flattened slices of bread ('tortillas') and even leftover Hamburger Helper. But my favorite was always the impromptu Bagel Pizza nights where I could build faces out of cheese and veggies under the premise we were having a family pizza night.
My point here, folks, is that meals are what you make of them, quite literally. Whether you're a busy mom just trying to serve 3 squares a day, or a laid back millennial trying to find the motivation to cook for just 2 when reaching for TV trays seems so much more simpler. It's nice to sit down to a fine dining experience at home, from time to time, but it's equally as rewarding to know you didn't slave over a meal and it still turned out amazingly delicious. The secret? Minimal ingredients- the less ingredients you have to handle the more you can enjoy the flavor of each individual ingredient, the less time you spend handling the food in the kitchen.

Refrigerated dough can be a lifesaver, providing countless meal hacks for the modern home cook. Did you know you can even get flat sheets of rolled 'pizza' dough in the cold case at your local supermarket? This past week Black Forest Honey Ham was on special at our neighborhood deli and I picked up a pound shaved extra thin for one of my favorite quick fix meals; Baked Ham + Cheese Wheels. I prefer the flavors of ham and Swiss, but you can also pair White Cheddar or even Provolone to suit your own tastes. Preparation is as simple as rolling out a refrigerated pizza crust into a rectangular shape, layering ham and cheese, and rolling tightly. Next cut 1.5" sections off of the roll and place your prepared wheels into a casserole baking dish.

The real magic to this recipe happens when you make the extra special glaze with Worcestershire Sauce, Butter, Dijon Mustard, Brown Sugar, and Poppy Seeds. Melt them together in a microwave safe measuring cup, stir well, and pour over the top of your prepared wheels. Let the glaze work it's way into the folds of the wheels and even pool down over the sides. Bake your Ham + Cheese Wheels in the oven for 20 MINS, or until the tops begin to turn a golden brown. We like our 'crust' a little chewy, don't be afraid to go extra golden for that flaky dough!

Not only do these Ham + Cheese Wheels look have a gourmet appearance, but they're incredibly easy to make ahead and freeze. One recipe's worth serves the two of us for several lunches when refrigerated, or they may be frozen after cooking and thawed at a later time. I would even wager that these would taste delicious over an egg with a cup of coffee the first thing in the morning. The possibilities are endless but your taste buds will thank you!

There has long been a debate in our family as to whether 'tricking' someone into eating something (usually on the premise that it is 'healthy' for them) is an acceptable practice. Last Summer, I went out to eat with my cousin, who has kids of a varied age, and watched as she told her youngest (4 and 9) that calamari (squid) was 'chicken.' Both kids happily gobbled up the pieces of fried squid slathered in marinara sauce, but their father was not too pleased. He argued that honesty should be a policy, even from parents to kids, and, himself, refused to try the new food. I am telling you this because I was raised the way my cousin chooses, but with a little less courtesy.

When I would ask what was for dinner, I would be told 'food,' and if I questioned an ingredient or flavor I would be asked if I liked how it tasted- if I said yes, the answer was almost always "then it doesn't matter!" And, when our Vietnamese and Chinese neighbors would bring over pungent smelling dishes from across the street, or next door, I was most often the guinea pig. Before too long I was asking to try new flavors and food on my own- that is how I came to sample the famous Shark Fin Soup; which should be known as '1000 bristle soup' for the hundreds of small cartilage bristles it is brined in.

And that is precisely where my curiosity of food and flavors came to be. I'll try most anything once- though I often prefer not to know what I'm trying until after (I'm still human and can be biased.) And, when it comes to mainstream foods, I am fascinated by the flavors brands attempt to recreate when selling the same old product with a face-taste? lift. Of course, we know just about any aromatic or flavor can be created artificially and put into just about anything. While, in America, we are currently transfixed by the myriad of Oreo cream flavors that rotate across shelves, International demographics have been pairing savory and obscure flavors with mainstream snacks for decades. In fact, the potato chip is perhaps the most violated snack in this matter.
In England Ketchup crisps are quite popular, while Japan has been enjoying Shrimp flavored chips on shelves for generations. So it should come as no surprise that the Lay's Do Us A Flavor 'competition' was around for quite a while before it hit the U.S. a few years ago. You may recall I did a post trying to push my Honey Sriracha Chicken Tenders as the next big flavor. While that didn't make the cut, this year's finalists are compelling, to say the least; Wavy Mango Salsa, Kettle Cooked Wasabi Ginger, Cheddar Bacon Mac And Cheese, and Cappuccino. Naturally, I had to try all 4 as soon as they hit shelves off national production. Cheers to Lay's for making them available in the smaller bag sizes for those of us who are simply curious, only one flavor really met with my approval this year...
While the Kettle Cooked Wasabi and Ginger had a great flavor, without being 'spicy' or overwhelming, the chips themselves were often much too thick for me. I suppose, if you like the Kettle Cooked, it is worth a try, but I prefer a lighter chip when snacking. The Mango Salsa had the most flavor, but was much too bold on the sweet versus savory scale and overwhelmed my taste buds. Ironically, Cappuccino was perhaps the dulled, with almost no flavor at all, and I'm sure would lend itself well as a dessert flavor, but not worth the calories otherwise in my opinion. This leaves us with the predictable Cheddar Bacon Mac And Cheese Lay's chips, which had more of a cheddar flavor than anything but satisfied as a snack, overall.

Licensing Trends In Your Local Freezer- Do They Belong?

Momma Told Me: Life isn't universal.

In the world of product marketing I envision a board of stuffy old men pushing their team of hip, generational, marketers to come up with a new way to turn spaghetti sauce into a common beauty product. If it sounds crazy to you consider that nearly every mainstream ingredient, eggs, pork, avocado, grains, have their own 'committee' and these committees are essentially in place to figure out ways to get you to buy and use more of the everyday staples you are already buying and using. Toilet paper, for example, is a product that truly hasn't changed in 100 years, and yet we find witty commercials telling us about how much we need this play, or how this roll gives off a lavender scent when spun (that products in my bathroom at this very moment.) A product that we buy constantly, and will buy until our last shopping trip on this Earth, and it's still being marketed towards us.

Why? Because every category of product is broken into brands. Branding makes the advertising world go round, and few things exemplify this as well as modern fast food and fast casual chains. Last year Taco Bell even developed an entire campaign to get it's consumers to buy the very same sauce I hoarded in my cupboards. A sauce you could grab by the handful when dining in, a sauce which held no other claim to fame by ingredient or flavor, other than the fast food chain with which it bore a logo of.
If you're like me and you're tired of seeing a new 'chain' brand show up in the freezer section of your local grocery store, you're probably not thrilled to note the recent trend of ready-made branding that has swept this convenience aisle. TGI Fridays and Chilis are two major brands of note local to me, that have overwhelmed my ad streams with their promotions for their new range and additions to the frozen food assembly. What confuses me, however, is that these meals and appetizers often don't replicate beloved chain favorites, but themes off-shoots of recipes the brands feel consumers would like. And other than a hefty mark up for carrying the brand name, seldom carry any other addition over existing competitors in the category. That is to say I find myself being less blinded by the glitz of 'branding' and reaching for the frozen staples my family has known and trusted for generations (Stouffer's for example.)

Regardless, a recent marketing study sought to understand the modern consumers desires in this unique crossover branding of fast food/fast casual chains to grocery store freezer. The study, not so surprisingly revealed a demand for fast casual quality brands such as Panera and Chipotle to make an appearance in the market, while consumers were less likely to trust value and fast food brands such as McDonald's. The study went on to summarize that consumers had expressed a lack of interest in breakfast food expansions, even feeling overwhelmed by the existing options in the frozen category, and the biggest category of flavor profiles desired fell within the Mediterranean range of cuisine.

If you're just joining us: In the Summer of 1991, at age 5, I recall hours (which to me seemed like weeks) of sitting in electronic warehouses watching my parents make their next major purchase. Momma, newly in remission, was still getting used to being a stay at home momma. Pop was over compensating the situation by indulging in every high tech kitchen appliance on the market. We'd already picked up 2 rice cookers, a Crock Pot, Steel Chamber Ice Cream Maker, Cutting Edge Microwave, Home Bread Maker- and were presently shopping Dehydrators- with a Meat Slicer surely to follow. Even so young, I remember staring up at the price tags, with so many digits, and gasping at the prices of these 'luxury' items. While today these kitchen electronics have become much more mainstream, in price and function, I still run into people who tilt their head when I mention such things. What do you need that for? And I've come to notice half our readers had never heard of a dehydrator until this series.



In either case, Momma taught me the value of a Renaissance housewife- the woman who's at home tasks change with the seasons and bring value to the household through frugality and innovation. Momma could shop a grocery bill down to pennies on the dollar (and in the best of times get paid to shop), complete my social studies model with dental floss and tongue depressors, or turn a broken vacuum into a terrarium. I learned from her never to waste, and that just because something comes in a frilled bag doesn't make it better than it's 'real', homemade, counterpart. And while Momma kept the dehydrator out year round, the summer was when our kitchen truly came to life. That was when I'd learn all her gourmet secrets and, like magic, a boring apple and yogurt blend would turn into a delicious fruit roll, or a piece of tough London Broil, tender and juicy beef jerky.

She'd bribe the butcher with bags of it, have the neighbors attempting to buy it, and turn pop and I to putty with a single slice. If we were playing Family Feud, and the Survey Said: Name The First Thing That Comes To Mind When You Think of Your Momma, Jerky would be my Number 1. There was nothing more exciting for Pop and I than seeing the mounding portions of trimmed beef waiting in the fridge. And the aromas which filled our household during those days were enough to burn calories with anticipation. It's a wonder I didn't catch food poisoning trying to eat undercooked, stolen jerky slices as a child!


Many novice dehydrator users are often most skeptical of working with dried meats. The truth is making homemade jerky in an Excalibur Dehydrator couldn't be simpler (or more affordable)! Believe it or not, I've used over 10 cuts of beef in my jerky adventures, and Momma's favorite, London Broil is still the best for flavor and texture. When this cut is on sale, you can stock up for as low as less than $1/lb! In fact, the marinade is the most expensive part....but I can't share our family secret for that (Momma would kill me). Don't worry, half the fun is playing with flavors, and the trickiest part is in the cut. If you're not blessed enough to have access to a meat slicer, or a kind butcher, you can partially freeze the cut of meat. London Broil will tend to be 1-2" in thickness, and when partially frozen should cut into fine slivers easily. In fact, this cut lends itself well to the classic strips many associate with beef jerky.


A good place to start, for a marinade, is with a high sodium base, such as Soy Sauce. Adding spices and heat, if desired, isn't as integral at the marinade stage and all meat should be marinated at least 10 hours. Longer marinating cycles will result in more flavor, but be careful not to over do it or your jerky will come out too salty! Momma's jerky is a sweet and tangy version with hints of Teriyaki- one of her secrets is to sprinkle a generous layer of her special sugar and spice mixture halfway through the drying process. It's easiest to add flavor outside of the marinating tub/container- and this is where any heat (pepper/paprika/etc) should be sprinkled on. Depending on the cut and size of the pieces, dehydration will take 10-16 hours on average, at 415F or above. Excalibur's timer comes in especially handy for overnight batches. It's wonderful to wake up to fresh jerky! Best of all, clean up is a breeze thanks to the brand's complimenting line of non-stick sheets!
